Ingredients

  • 1 turkey carcass
  • 6 small diced potatoes
  • 4 large diced carrots
  • 2 stalks of diced celery
  • 4 quarts of water
  • 1 ½ cups of shredded cabbage
  • 1 large diced onion
  • ½ cup of raw barley
  • 1 teaspoon of dried basil
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of dried parsley
  • 1 teaspoon of dried basil
  • 1 bay leaf
  • ¼ teaspoon of freshly cracked black pepper
  • ¼ teaspoon of paprika
  • 1 ½ teaspoons of salt
  • ¼ teaspoon of poultry seasoning
  • 1 pinch of dried thyme

Recipe

  • Place your turkey carcass in a large sauce pan. Add some water and bring to boil.
  • When it starts to boil, lower the heat and bring to a simmer.
  • Cook the turkey until the meat falls off the bones. This should take about an hour to achieve.
  • Remove the turkey flesh/carcass and chop the meat into pieces.
  • Get a clean soup pot and strain your turkey broth through a fine mesh strainer into it.
  • Add your chopped turkey into the strained broth. Boil with low-medium heat.
  • Pour your diced potatoes, onions, celery, carrots, cabbage, barley, tomatoes, parsley, basil, bay leaf, Worcestershire sauce, salt, paprika, black pepper, thyme and poultry seasoning into the broth and stir properly.
  • Bring soup to simmer for about an hour until all the vegetables are tender.
  • Remove the bay leaf from the soup and your turkey carcass soup is ready to serve.
